Its whats for dinner tonight. Super easy. Yippie!!
Ingredients:
1/2 cup diced onion
9 oz. frozen chopped spinach (thawed)
15 oz. ricotta cheese
1 egg (beaten)
6 oz. grated Romano Cheese
1 lb. ground beef
1 teaspoon red pepper flakes
10 cooked lasagna noodles
1 jar Pasta Sauce
Preheat oven to 375 degrees.
Brown ground beef. Add spinach, onion and pepper flakes. Cook on medium heat additional five minutes.
Coat bottom of cooking dish with a thin layer of the pasta sauce.
Mix ricotta cheese, egg and 1/2 of the Romano Cheese in a bowl.
Spread a layer of the cheese mixture on the lasagna noodle.
Add a layer of the beef mixture.
Now, start rolling and place one at a time in the baking dish.
Top with remaining pasta sauce.
Top with remaining Romano Cheese.
Cover with foil and bake for 20 minutes.
Remove foil and bake additional 15 minutes until brown and bubbly.
I put each roll up in a microwavable bowl, so we can reheat for lunches, etc.
