Recipe Contest


I entered these cornbread muffins in a recipe contest today.


Cheesy Onion Cornbread Muffins

1 medium sweet onion chopped
1/2 stick of butter
1 cup frozen corn
1 cup coconut milk
2 eggs
1 cup shredded cheddar cheese
2 teaspoons baking powder
1 1/4 cups flour
1/2 teaspoon salt
1 1/2 cups white cornmeal
dried pepper flakes
12 jalapeno slices

Prepare muffin pan with cooking spray.  Preheat oven to 400 degrees.  Saute onion and butter for 5 minutes in skillet.  Place in mixing bowl. Add milk, eggs and cheese and beat for few minutes on low speed.  Add baking powder, salt, flour,  and cornmeal.  Beat on low speed a few more minutes.  Spoon into muffin pan.   Top with dried pepper flakes and jalapeno slices.  Bake for 35 minutes.

They were super easy to make.  I think next time I'll add a little more heat.  Like chopped jalapeno inside.  They will be good with pinto beans tonight.
